A round berry cheesecake sliced into eight pieces sits on a wooden board. Surrounding it are bowls of melted chocolate, fresh cherries, orange slices, grapes, and strawberries on a wooden table.

New York-style cheesecake has become one of the most famous desserts worldwide, often appearing on menus far beyond the U.S. In a way, it represents the global reach of New York’s culinary influence. Much like bagels or pizza, cheesecake has become synonymous with the city’s identity. For many, tasting an authentic New York cheesecake evokes the essence of the city’s cosmopolitan spirit.

New York Style Cheesecake has its roots in the early 20th century. Its fame grew from the bustling Jewish delis and bakeries of New York City. Although cheesecake traces back to ancient Greece, it was the introduction of cream cheese in the U.S., particularly in 1872 by a dairy farmer named William Lawrence, that paved the way for the smooth, rich texture now associated with New York cheesecake.

What makes it unique is the use of cream cheese as the primary ingredient, setting it apart from other cheesecakes made with ricotta or cottage cheese. Over time, this indulgent dessert has become an iconic symbol of New York’s culinary tradition.

Equipments:

  • 23 cm (9-inch) springform pan
  • Electric mixer or stand mixer
  • Mixing bowls
  • Spatula
  • Baking tray
  • Aluminum foil
  • Cooling rack
  • Food processor (for crushing biscuits)
  • Measuring Spoons and Cups

Instructions:

Prepare the Crust:
  • Preheat the oven to 175°C.
  • Crush the lotus biscuits into fine crumbs using a food processor.
  • Mix the melted butter and sugar with the crumbs until they resemble wet sand.
  • Press the mixture evenly into the bottom of the springform pan.
  • Bake for 10 minutes and allow to cool while preparing the filling.
Prepare the Filling:
  • Lower the oven temperature to 160°C.
  • In a large mixing bowl or in a stand mixer (on medium speed), beat the softened cream cheese with sugar until smooth and creamy, approximately 3 minutes.
  • Add the sour cream, and vanilla extract, and mix until just combined.
  • Beat in the eggs one at a time, ensuring not to overmix (overmixing can lead to cracks).
Assemble and Bake:
  • Wrap the outside of the springform pan with two layers of aluminum foil to prevent water from leaking into the cheesecake during baking.
  • Pour the cream cheese mixture into the cooled crust.
  • Place the pan inside a larger baking tray and pour hot water into the tray (creating a water bath or bain-marie), filling about halfway up the sides of the springform pan.
  • Bake for 55-65 minutes, or until the center is slightly jiggly but the edges are set.
Chill and Finish:
  • Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. This helps prevent cracks.
  • After an hour, remove the cheesecake from the oven and cool completely on a wire rack.
  • Chill in the refrigerator for at least 4 hours or overnight for the best texture.
  • Prepare a fruit compote of your choice (Try blueberry or Cherry) and spread it over the chilled cheesecake.
  • Chill again for 30 minutes before serving.

This recipe delivers the rich, dense cheesecake New York is famous for, with a slightly tangy finish due to the sour cream. By following these tips, your cheesecake will have a smooth texture with a perfectly creamy interior.

My Tips:

  • Room temperature ingredients: Ensure that all dairy products, especially the cream cheese, are at room temperature to create a smooth batter.
  • Water bath: A water bath helps regulate the temperature and provides a moist baking environment, preventing the cheesecake from cracking or drying out.
  • Slicing: For clean slices, use a hot knife, wiping it clean between each cut.
  • If you don’t have Lotus biscuits handy, Graham crackers or even crushed oat cookies work well.
  • Mascarpone can be used instead of Cream Cheese for a slightly richer flavor.
  • Greek yogurt can be substituted in place of sour cream, although it may alter the texture slightly.

Troubleshooting Guide:

Cracks on the Surface

To avoid cracks, ensure the batter is not overmixed and cool the cheesecake slowly (inside the oven). Using a water bath also helps maintain even temperature.

Undercooked Centre

The center should still be slightly jiggly when removed from the oven; it will continue to set as it cools.

Soggy Crust

Ensure the foil wrapping is tight around the pan to prevent water from seeping in during the water bath process.

In summary, New York-style cheesecake is more than a dessert; it’s a symbol of the city’s history, a reflection of its immigrant past, and an enduring emblem of New York’s impact on global cuisine.
