With Roasted Macadamia, Brazil Nuts, Almonds & Pistachios
Nougat has long held a revered place in confectionery—its airy chew, honeyed sweetness, and nut-studded texture create a harmonious bite that balances indulgence with sophistication. In this professional-grade recipe, we elevate the classic nougat by integrating rich dark chocolate and a premium selection of roasted nuts: macadamia, Brazil nuts, almonds, and pistachios. The result is a luxurious, chocolate-infused nougat that’s deeply satisfying in flavor and texture.

Nougat traces its origins to the Mediterranean, especially regions of France (Montélimar), Spain (Turrón), and Italy (Torrone). Traditionally made with egg whites, honey, and nuts, it symbolizes celebration and abundance—often featured in weddings, holidays, and regional festivals. Chocolate nougat is a more modern adaptation, popularized in the 20th century through artisanal and commercial confectioners who sought to enhance its richness with cocoa, transforming it into a bridge between classic nougat and modern pralines.

Chilling time : 4 hours to overnight
Instructions:
Nut Preparation
- Preheat oven to 160°C.
- Roast the nuts individually for even coloration:
- Almonds: 10–12 min
- Pistachios: 6–8 min

- Keep warm (around 40°C) for later incorporation.
Meringue Base
- In a heavy saucepan, combine sugar, glucose syrup, and honey with a splash of water.
- Cook to 120°C without stirring (brush down sides with water if crystallizing).
- In the stand mixer, place egg whites and a pinch of cream of tartar (acid stabilizer).

- Begin whisking at low speed once the syrup hits 120°C, carefully and slowly stream the hot syrup into the meringue with the mixer running on high speed.
- When the nougat mixture thickens and is glossy, lower the speed and add melted chocolate.
- Fold in the roasted nuts quickly using a heatproof spatula.

Molding and Setting
- Line mold with non-stick paper and lightly dust with rice flour or cornstarch.
- Pour nougat mixture and spread evenly.
- Place another layer of non-stick paper on top. Press down with a flat tray to compress.

Tips for Best Results:
- Sugar Crystallization: Always use glucose syrup or invert sugar to prevent graining.
- Temperature Precision: Invest in a reliable thermometer; undercooking or overcooking syrup ruins texture.
- Nut Oiliness: Let roasted nuts cool fully to prevent oil release, which can destabilize nougat.
- Do not let chocolate cool too much—keep it fluid for homogeneous mixing.
- Humidity Control: Store nougat in a dry, airtight container; moisture softens and degrades structure.

Troubleshooting Guide:
| Issue | Cause | Solution |
|---|---|---|
| Nougat too soft | Syrup undercooked or high humidity | Ensure syrup reaches exactly 145°C |
| Nuts sink to bottom | Mixture too hot/thin during folding | Cool mixture slightly before folding in nuts |
| Sticky surface after cutting | Insufficient drying or humid environment | Let set longer; store with silica packs |
| Sugar crystals in texture | Inadequate glucose or stirred syrup | Don’t stir syrup; use sufficient glucose |
| Chocolate streaks or separation | Chocolate too cool or overmixed | Fold quickly while both elements are warm |
