Instructions:

  • Set aside to cool completely.
Prepare the Sesame Crumb:
  • Toast sesame seeds in a dry pan until light golden (avoid over-browning, as they bake further).
  • Add a touch of atter to bind.
  • Mix until seeds are evenly coated.
  • Spread on a plate to cool.
Make the Shortbread Dough:
  • Combine flour, ghee (or butter), and almond meal in a bowl. Rub gently with hands until sandy.
  • Rest in the fridge for 30 minutes.
  • Add sugar, water, and a little atter.
  • Knead gently with warm hands until soft, sticky, and cohesive.
  • Let rest for 10 minutes.
Shape and Coat the Cookies:
  • Preheat oven to 180 °C.
  • Portion the dough into small 20 g balls.
  • Press one side firmly into chopped pistachios.
  • Flip and press the other side into the sesame crumb.
  • Place pistachio-side down on a parchment-lined tray.
Bake:
  • Bake for 10-15 minutes with both rod heating and convection on until golden.
  • Cool completely on a wire rack before storing.
