Traditionally baked during holidays and special occasions, babka’s name stems from the Slavic word babka, meaning “grandmother,” a nod to the twisted, pleated form resembling a grandmother’s skirt.

While earlier versions were filled with cinnamon or dried fruit, the 20th-century Jewish diaspora popularized the now-iconic chocolate version, especially in New York bakeries. This recipe delivers a tender, buttery crumb, bold chocolate richness, and a syrup-glossed crust that shines.

Instructions:

Prepare the Base Dough
  • In a stand mixer bowl, combine the T55 flour, milk, eggs, yeast, and salt.
  • Mix with a dough hook on low speed (2–3 minutes) until a rough mass forms.
  • Then increase to medium speed (5–6 minutes) until the dough turns smooth and elastic.
  • With the mixer on low, add softened butter piece by piece.
  • Once incorporated, increase the speed again and knead for 10–12 minutes.
  • The dough should become silky, shiny, and elastic — it should stretch into a thin windowpane without tearing.
  • Transfer the dough into a lightly greased bowl. Cover with plastic wrap or a damp towel.
  • Let rise for 30-60 minutes at room temperature (26–28°C) or until doubled in size.
Prepare the Chocolate Paste
  • Melt chocolate and butter together (bain-marie or microwave).
  • Stir in cocoa powder, powdered sugar, nutmeg, and salt.
  • Let cool until spreadable consistency (thick but soft).
Roll, Fill and Shape
  • Divide dough in half (for two loaves). Roll each into a 30×40 cm rectangle.
  • Spread chocolate paste evenly across each sheet, leaving a 1 cm border.
  • Roll tightly from long edge into a log.
  • Slice each log lengthwise with a serrated knife to expose layers.
  • Twist the halves together, keeping cut sides facing up, then place in lined loaf pans.
Proof & Bake
  • Cover shaped loaves and let rise for 1 hour at room temp.
  • Preheat oven to 170°C (convection) or 180°C (static).
  • Bake for 40–45 minutes, or until internal temp reaches 90–93°C.
Sugar Syrup Glaze
  • Simmer sugar and water until fully dissolved (no color).
  • Brush hot syrup over babkas immediately after baking. Use all the syrup.
  • Let cool fully in pans before unmolding.
Variations

Nutella Babka: Replace chocolate paste with Nutella (250 g per loaf).
Hazelnut Crunch: Add toasted chopped hazelnuts to the filling.
Cinnamon Halva: Sub sesame paste + cinnamon sugar for a Middle Eastern spin.
Mini Babkas: Shape in muffin tins for individual portions.
